2014 Sierra - thermostat question

Hi everyone, I've recently registered here. So nice to meet you all!
Now, here's what I need someone to please help me with. My GMC Sierra started to overheat from time to time, and I believe either something gets stuck in the cooling hose, or the thermostat keeps getting stuck. Now I was wondering, is there a way to replace the thermostat without having to drain the coolant? And also, I was wondering, if that's something I can do by myself in my garage?..
 
Okay, here's the news - the problem is about my thermostat that won't open.
Now, I was wondering, can the thermostat for $25 work fine? I mean, the dealership wanted something about $200, and the aftermarket one is only $25, has anyone tried installing a cheap thermostat? If so, did it work okay?

Edit: The brand name is Stant, here's the thermostat I was talking about.
 
Stant is normally a pretty good brand of thermostat. I'm kind of surprised you have one sticking in a 2014. If you are concerned that it won't work, before you put it in put it in a pot of boiling water on the stove, you will see it open. Unfortunately, I'm not sure how to replace the thermostat in that vehicle, so I don't know if it is a simple job. My guess is no, not much is a simple job on newer vehicles.
