Gmc sierra third Catalytic Converter

i own a 2011 gmc sierra 1500 ive currently changed my exhaust im running a y pipe with dual glass packs i was wondering what the third cat does and if i where to cut it out would i hear a change in sound and if i shoud do it thanks for your responces any information would be helpful
