Help with Suspension PLEASE!!

Hello, I am new to this forum so I'm not even sure if I am posting to the right place.
Anyway, I have just bought (this morning) a 2002 GMC Sierra 1500 with 41k miles on it. I already love this truck. But I was bitten by the customizing bug long ago and since haven't been able to recover from it.

I read the posts about the leveling kits; the different brands, styles, and prices, but really don't know what would be the best fit for me.
The truck does the typical nose dive in the front and i want to level it out with the back. Problem is, I want to run a mud tire with some size to it. 33's?? 35's?? I'm not sure which will fit WITHOUT rubbing.

Also would just the rough country torsion bar key and shock spacers just do the trick (for $100) OR the rough country full level kit with the blocks for the rear be better ($200) ??
-IF the full kit is better would the blocks make it an awfully rougher ride? (Had two lifted Jeeps, loved the look, despised the ride)

I have also heard/read many people talking about the Bilstein shocks. Do they add any lift at all or just a beefier shock?

I just would like some opinions please. I do not want to buy just torsion bar keys or something if 33's or so will rub.

hey ive got a 2500hd 02 gmc and all i did was turn up the torsion keys and it clears 33s finally rebuilt the front end after 180000 with no issues at all in between i know its a low budget way. if i had the money i would have done the level kit with blocks
 
I used to have a 2001 GMC Sierra 1500 Z71 Off-road. just a leveling kit I cleared 32"x11.5"R18 wheels with lots of space. Max I would put on a simple leveling kit would be a 33x11.5 or 33x12.5 but 12.5 is pushing the width. Later on I put a 6.5" BDS suspension lift in it, with 5.5" blocks under the rear leafs and I did not notice much difference in ride, but as well I went from the 32x11.5R18 to a 35x12.5R16 after a month to make it look proper. As you can imagine it looked funny with a bigger lift and small little tires.

First 3 pics are with the 32x11.5R18 and leveling kit. Then 6.5" lift with 35x12.5R16
