"Random" Check Engine Light - only on highway

My Check Engine Light keeps coming on, but only when I'm on the highway. If I'm just driving back roads or taking lots of short trips, it never comes on. I have a 1994 GMC Jimmy 4.3, (4) Door.

All of my fluids are in acceptable ranges. What am I missing?? Any suggestions?
