Check your temperature sensor's wire harness leads, or the temperature sensor may have gotten damaged when the thermostat was replaced. The Temp sensor is usually located on the intake manifold, close to the thermostat housing, so chances are that the wire may have gotten disconnected or shoring out due to being off or the sensor may have gotten damaged.
