First Off, Hello, Nice to be part of the Forums here now :)
So, I Own a 1994(1993) GMC Jimmy, it is a 1993, but manufactured in the first Quarter of 1994, I have been talking to the local GM dealership in town, as the Frame is immaculate and everything is, with the exception of the passenger fender, that I can buy brand new remanufactured locally for $110+tax and i was inquiring there about a new V6 for it, as the engine is the only thing really starting to go. the Parts guy had atually mentioned that i would not easily be able to get a crate V6 vortec, and might be better off if interested buying a brand new crate 305 V8, the question I have as i wanted some personal experience input, is would i be able to put the engine in with Fuel injection easily? he mentioned they were designed for a Carb, and also, how difficult would it be to have it running with an OBDII computer, instead of the basic OBD that was used in 1993? this might just be a totally Dumb lineup of questions, but i figured i would ask a community that seems to Know GM's :)

Doing a swap like the one your thinking of is simple if you get all your parts lined up and matched. Running the larger engine is common, but you also have to recalibrate your transmission to handle the extra HP and torque of the larger engine.

As for your OBD question, yes you can have a OBDII PCM running your engine, just make sure that the engine is also matched up to run o a OBDII system. The engines are different in as to the sensors that are used to run them, best for you is to keep it as a OBDI system and replace your PCM to run a V8 rather then a V6.

The other way is to have your 4.3 rebuilt with a better Cam and slightly higher compression ratio. This will give you more torque and HP. Remember keep it simple as much as possible in the way your going to replace your engine. Hint, you can get lots of 4.8 Vortec drive train engine, transmission and PCM from a used pick up truck or van that has been in a slight accident.

Good luck and keep us posted and as for your Jimmy being a fuel injected engine. You can not swap it out or convert it to a carb unless your only going to use it for off road only.
