can you bypass the primary o2 senson on a 2000 GMC Jimmy?

If so, how and what products do you recommend? I've seen simulator sensors but they all seem to be for the sensor AFTER the cat. I need to bypass the sensor BEFORE the cat...

NO you can not bypass the O2 sensors before the Catalytic Converter. The right and left bank O2 sensors are needed to make the right adjustments to your air fuel ratio. The the O2 sensors bypassed or if it's not functioning properly. The ECM will run on a open loop and will set the engine to run on a reset program, this preset program is also know as limp home program and the performance and fuel economy will not be not at it's best.

With a bad OS sensor or disconnected, you can still drive your Jimmy. But as mentioned you performance will be compromised and you may experience excessive carbon build up in your engine.
