Overheating issues

So for starters I have a 2006 GMC Sierra 1500 4x4 v8 5.3L. it's my daily driver and I've had it for a little over a year with minimal issues just normal maintenance (brakes, oil changes, alternator). How ever it started over heating and leaking coolant recently. No big deal, I changed out the thermostat and water pump, that fixed the leaks as far as I can tell. But the temperature gauge will go up to the 3/4 mark and then the fans kick on and they're LOUD. It has the electric fans directly behind the radiator and not the clutch fan assembly. They're expensive to replace and I don't really want guess at this point. Just looking for some advice at what I could potentially diagnose myself without going to a garage. I should also mention the truck is not throwing any codes at this time. Any advice would be appreciated. Thanks in advance!
 
do you notice any differance in fan speed when the a/c is on?
the fans are variable speed, maybe a bad connection, unplug and plug back in the fans
what tempiture thermostat did you use and did you test it in a pan of boiling water and a tempiture gauge?
